Ingredients: 2 C diced peeled tart apples 1 C water 1/2 C plus 1 T sugar, divided 5 t cornstarch 1/2 t cinnamon 1/4 t nutmeg 2 t lemon juice 12 slices day-old bread 3 eggs 2/3 C milk 2 t vanilla extract Instructions: In a large saucepan, cook apples and water over medium heat for 10 min. or until apples are tender. Combine 1/2 C sugar, cornstarch, cinnamon and nutmeg; stir into apple mixture. Bring to a boil; cook and stir for 2 min. or until thickened. Remove from heat; stir in lemon juice. Spread six slices of bread with 1/3 Cup filling; top with remaining bread. In a shallow bowl beat the eggs, milk, vanilla, and remaining sugar. Dip sandwiches into mixture. Cook on a lightly greased hot griddle until golden brown on both sides. Sprinkle with powder sugar (optional).
Maple-Glazed Pork with Apples
Ingredients: 1/3 C maple syrup 1 T spicy brown mustard 1/4 t salt 1/4 t pepper 1/4 C bread crumbs 4 pork loin cutlets (about a 1 lb.) or can sub for chicken thighs or breasts 2 t olive oil 1/2 C apple cider 2 medium apples, each cored and cut into 16 wedges Instructions: In a small bowl, stir together the maple syrup, mustard, salt, and pepper until well combined. Place the bread crumbs in a large ziplock bag, add the pork, then seal the bag and shake it to coat the cutlets. Heat the oil in a large skillet over medium-high heat. Add the pork and cook it for 2 minutes on each side or until golden brown. Add the cider and apple wedges. Bring the cider to a boil, then reduce the heat and let it simmer uncovered for 5 to 7 minutes or until the pork is done. Stir in the maple syrup mixture and cook the pork for 5 minutes more or until the pan sauces are thick and syrupy. Makes 4 servings.
Double Apple-Walnut Bread
Ingredients: 1 C smooth unsweetened applesauce 1/2 C sugar, plus 1 T for sprinkling 1/2 C packed light brown sugar 1 large eggs 1/4 C oil (canola or vegetable) 1/4 C plain yogurt 1 t vanilla extract 2 C flour 1 t baking powder 1/2 t baking soda 3/4 t salt 1/2 t cinnamon pinch of nutmeg 1 C peeled, cored, and finally diced apples 1/2 C chopped walnuts Instructions: Line a 9- by 5-inch loaf pan with waxed or parchment paper (or grease and flour it), then set it aside. Heat the oven to 350º Combine the applesauce, sugar, brown sugar, eggs, oil, yogurt, and vanilla extract in a large bowl. Whisk well to blend.
In another large bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Make a well in the dry ingredients with a wooden spoon and pour in the applesauce mixture. Stir just enough to combine; do not over-mix. Fold in the apples and walnuts.
Scrape the batter into the prepared pan and smooth the top with a spoon. Evenly sprinkle one tablespoon of sugar over the top. Bake on the center oven rack until a toothpick inserted into the center of the bread comes out clean, about 50 to 55 minutes. Remove the pan from the oven and put it on a cooling rack for about 15 minutes, then remove the loaf from the pan and place it on the rack to finish cooling. Makes 10 servings.
